How to Make a Funnel Cake

Several people have asked me what a funnel cake is. It is kind of like an elephant ear, with holes in it. If you don’t hit the carnivals in the midwest, you may know these by other names in other parts of the United States and the world. It is also something like Indian fry bread, I imagine. Here is what I saw demonstrated, but I don’t know the cook’s name.

They use a pourable batter, a sweet batter lighter than pancakes. In a pan or vat of hot oil, they pour the batter carefully and slowly into a metal ring hooked to the side of the cooker. The ring doesn’t touch the bottom of the cooker. I guess they flip it before they take it off the heat, or just ladle hot oil onto the top as it cooks. When the cake comes out of the oil, they drain it and then sprinkle on sugar, or some other topping of your choice. It goes on a paper plate. You’ll need plenty of napkins and someone to share your "wheel of fortune" with.
